Marco Edwardes

Marco’s career as a Chef began in his homeland of northern Bavaria at Laudensack’s Parkhotel & Beauty Spa, a boutique luxury hotel with a Michelin starred restaurant. He’s set the bar high for himself ever since. After many years of training, working, and traveling, New Zealand claimed his heart. Firstly, via his love for his kiwi wife, but also via the quality of locally sourced ingredients on offer.

Marco was Head Chef at the renowned Pegasus Bay Winery in North Canterbury, planting his roots firmly in New Zealand wine tourism. He went on to helm the famed kitchen at Te Whau Vineyard & Restaurant on Waiheke Island. His ten-year tenure was recognised with multiple national awards and accolades, including Cuisine Magazine’s Good Food Guide Top 100, Winner - Best Rural/ Destination Restaurant in the Annual Metro Magazine’s Top 50 Awards many times over.

Marco’s cooking style is contemporary New Zealand cuisine with a classical European base. He combines fresh, local quality ingredients with a focus to produce flavour and simplicity - perfect for his other love - teaching people to cook. He shares his passion for Seafood regularly at the Auckland Seafood School. He’s hands-on with community-based fundraising events and inspires children at Te Huruhi Primary School (Garden to Table Program) where they grow fruit and vegetables, and prepare and cook healthy food.

Marco developed recipes as guest chef for the popular ‘My Food Bag’ and is a co-author of ‘The Complete New Zealand Seafood Cookbook’ co-published by Penguin and the Auckland Seafood School.

Recently, Marco helmed the kitchen at the Alibi Brewers Lounge, (one of Metro’s Top 50 Bars in Auckland) home of the Alibi Brewing company. Situated at Tantalus Estate in the vine laden Onetangi Valley on Waiheke Island, serving up Creative Cocktails, Delicious Dishes, Genuine Vibes and Craft Beer made onsite. A classy speakeasy for the discerning beer and cocktail crowd.

Today, Chef Marco is leading an amazing kitchen team as Head Chef at Casita Miro on Waiheke Island. Casita Miro specialises in the cuisine of Spain and the wider Mediterranean Rim and takes enormous pleasure in sharing the love for fine food, wine, and sherry.
